Key Lime Pie


My... my... my.... my key lime pie!

Whenever I'm craving my new Florida favorite I start singing that Kenny Chensey song to Peyton, titled Key Lime Pie. Honestly, try singing that song without craving the sweetness it's based on. It's impossible.

Anyway, we were heading over to a friends who were so gracious to invite us over for a cookout. I wanted to bring a desert but was a little crunched on time. Anything needed cool down time, and not only that, but I wanted something that reminded me of a good hot summer day cookout desert.

In walks key lime pie. I found a review online that was simple and had lots of rave ratings, so I went for it.

I must say, no one was disappointed with this, and it was so beyond simple to prepare that I would have to say this is my new go-to for almost anything!

1 9 inch prepard graham cracker crust (I used the reduced fat kind)
3 (14 oz. each) cans of condensed sweetened milk (fat free)
1/2 cup fat free sour cream
3/4 cup key lime juice (I used Nellie & Joe's brand, found at Publix)
1 tablespoon grated lime zest

Preheat oven to 350.

In medium bowl, combine all ingredients minus the crust. Mix well, until there are no lumps from sour cream.

Pour into graham cracker crust.

Bake at 350 for 12-15 minutes. Do not allow pie to brown on top! I baked mine for 12 and the consistency was perfect, but my oven also seems to be a little warmer than others.

Put into refrigerator to cool before serving.
