Slow cooker Chicken a la King


There are times when I have no regard for Peyton. Or really, what he likes and doesn't like. For example, this recipe. In reading it and seeing that there were a lot of peas in it, I didn't care that he didn't like peas. In fact, hates peas. Why? I don't know. Maybe I'm a crap wife. Or maybe I just know him better than he knows himself. I prefer to think I'm the latter.

Most people I know have come across Chicken a la King at some point or another. This dish is the reason that I know and love pimentos. Yum.

So, I made this, warned Peyton that there were peas in it, and threatened to starve him if he didn't it eat. Okay, not a threat per-say. But he knows how good my food is, so I know/hope he trusted me.

I didn't let the man down. Although he didn't actually chew any of the peas, he did go back for seconds.

Original recipe here, my version below.

1 can reduced fat cream of chicken soup
3 tablespoons all purpose flour
dash of salt, pepper and red hot pepper flakes (all to taste)
2 pounds boneless, skinless chicken breast, cut into bite sized pieces
1 celery rib, chopped
1/4 cup onion, chopped
1 seeded green pepper, chopped
10 oz frozen peas
2 tablespoons pimentos, diced (I use a little extra)

Add everything except peas and pimentos to slow cooker, cook on low 7 hours.

Add frozen peas and pimentos and cook an additional 30 minutes.

Serve.

** I usually serve this over rice **
