Balsamic Garlic Chicken Breasts


I saw this recipe in my July 2010 issue of Southern Living magazine. It looked like something Peyton and I would both enjoy, I'm a garlic fanatic, and he loves balsamic anything. So, how perfect was this?

We were thisclose to ordering pizza last night, it's just been one of those weeks. Between traveling, family issues, we currently have 5 dogs in our house, it's been hard to get back into the swing of eating at home and eating healthy. I whipped out this recipe hoping that it was truly as easy to prepare as it sounded. Luckily, I was right.

It was good, simple to prepare, and helped me to not order pizza. So, three bonus points for this recipe!

Ingredients:
3 boneless, skinless chicken breasts
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
2 tbsp. buttr
1 tbsp. olive oil
1/2 cup chicken broth
1/4 balsamic vinegar
1 tbsp. lemon juice
3 chopped garlic cloves
1 1/2 tsp. honey

Sprinkle chicken with salt, pepper and garlic powder.

Melt butter and olive oil in a large skillet over medium-high heat. Add chicken and cook 6-7 minutes on each side until done. Remove chicken and keep warm.

Add chicken broth, and remaining ingredients to skillet, and cook 5 minutes or until slightly thickened. Stir to loosen particles from bottom of skillet. Serve chicken with sauce.
